Ingredients
  

  • 2 medium zucchinis grated and excess water squeezed out
  • 1 large egg
  • 1 small onion finely minced
  • 1 cup sharp cheddar cheese shredded
  • 1 cup seasoned breadcrumbs Italian style recommended
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • Cooking spray for nonstick

Instructions
 

  • Preheat the oven and spray a mini muffin tin with cooking spray.
  • Grate the zucchinis and squeeze out excess moisture using a kitchen towel.
  • In a bowl, combine the dried zucchini, egg, onion, cheddar, breadcrumbs, salt, and pepper until thick.
  • Spoon the mixture into the muffin tin, pressing down firmly.
  • Bake for 16 to 18 minutes until golden and crisp.
  • Cool for 5 minutes before removing and serve warm.

Notes

Store cooled fritters in an airtight container in the refrigerator for up to 4 days. Reheat in a toaster oven or air fryer for best results.
