Ingredients
  

  • 490 g peaches diced (or 5-6 medium)
  • 2 tbsp cornstarch
  • 1.5 tsp almond extract
  • 1 tsp ground cinnamon divided
  • 0.75 cup old-fashioned oats gluten-free if necessary (75g)
  • 0.25 cup whole wheat flour or millet flour (30g)
  • 2 tbsp pure maple syrup
  • 2 tbsp unsalted butter melted (28g)

Filling

  • 4 extra large peaches diced (490g)
  • 2 tbsp cornstarch
  • 1.5 tsp almond extract
  • 0.25 tsp ground cinnamon

Crumble Topping

  • 0.75 cup old-fashioned oats gluten-free if necessary (75g)
  • 0.25 cup whole wheat flour or millet flour (30g)
  • 0.75 tsp ground cinnamon
  • 2 tbsp pure maple syrup
  • 2 tbsp unsalted butter melted (28g)

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease an 8-inch square baking pan.
  • In a medium bowl, combine the diced peaches with cornstarch, almond extract, and ¼ teaspoon of cinnamon. Mix well until everything is thoroughly coated.
  • In a separate bowl, mix together the oats, flour, and the remaining ¾ teaspoon of cinnamon. Stir in the maple syrup and melted butter until fully incorporated, creating the crumble mixture.
  • Spread the peach mixture evenly into the prepared baking pan. Sprinkle the oat crumble mixture evenly over the top of the peaches.
  • Bake for 35-45 minutes, or until the peach juices are bubbling and the topping is golden brown and crunchy.
  • Allow the crumble to cool completely to room temperature. For the best texture, let it rest for at least 2 hours before serving to allow the juices to thicken.

Notes

  • For a vegan or dairy-free option, substitute Earth Balance buttery sticks or coconut oil for butter. If peaches are not very ripe, you can add a sweetener like agave or honey to the filling.
  • This crumble can be reheated in individual portions if you prefer it warm after it has rested. The topping will be moist initially but crisps up during baking.
