  • 2 large eggs

Instructions
 

  • Preheat oven to 350°F. Line a 9 x 5-inch loaf pan with parchment paper or grease with cooking spray.
  • Whisk flour, pumpkin pie spice, baking soda, cinnamon, baking powder, and salt in a medium bowl. Set aside.
  • In a separate large bowl, whisk together granulated sugar, brown sugar, and melted butter. Stir in pumpkin purée, eggs, and vanilla until combined.
  • Add the dry ingredients to the wet mixture. Stir until just combined and no dry streaks remain. Do not over-mix.
  • Pour batter into the prepared pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the bread in the pan for 10 minutes. Run a knife around the edges, invert onto a wire rack, and cool for 5-10 minutes before slicing.
