Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ tsp salt
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup vegetable oil
  • Zest and juice of 2 lemons
  • 1 cup powdered sugar for glaze
  • 2-3 tbsp lemon juice for glaze

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • Combine flour, sugar, salt, baking soda, and baking powder in a mixing bowl.
  • In another bowl, beat eggs, then mix in sour cream, vegetable oil, and lemon zest and juice.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into the loaf pan and bake for 45-50 minutes until a toothpick comes out clean.
  • Prepare the glaze by mixing powdered sugar with lemon juice while the loaf cools.
  • Once cooled, pour the glaze over the loaf and let it set before slicing.

Notes

Do not overmix the batter; mix only until the dry ingredients are incorporated. Allow the loaf to cool completely before applying the glaze to prevent it from melting.
