Ingredients
  

  • 1 pound ground beef (80% lean)
  • Vegetable oil to brush pan
  • Salt Kosher salt preferred
  • 8 slices American cheese
  • 4 soft buns
  • Mayonnaise
  • Optional toppings ketchup, mustard, lettuce, tomato, onions, pickles, BBQ sauce, bacon, avocado, blue cheese, pepperoncinis

Instructions
 

  • Heat a cast iron skillet or griddle on high heat (400-425°F) for several minutes.
  • Brush the hot skillet with vegetable oil.
  • Loosely shape 1/4 pound of ground beef into a ball without packing it.
  • Place the beef ball onto the hot skillet and smash it flat to about 4 inches in diameter using a spatula or grill press.
  • Season the patty generously with salt and cook undisturbed for about 2 minutes until edges are brown and crispy.
  • Flip the burger, season with more salt, and top with two slices of American cheese.
  • Cook for approximately 1 more minute until the cheese is melted.
  • Serve on a warm bun with mayonnaise and desired toppings. Work in batches if necessary.

Notes

Use 80% lean ground beef for optimal flavor and juiciness. Do not pack the meat before cooking to ensure crispy edges. A cooking surface temperature of 400-425°F is ideal. Mayonnaise is recommended in generous amounts, and toppings are optional.
