Ingredients
  

  • 1 medium yellow onion finely diced
  • 1 medium to large green bell pepper diced
  • 1 medium to large jalapeño diced
  • 3 to 4 cloves garlic minced
  • 1 ½ to 2 teaspoons ground cumin
  • 2 to 3 teaspoons chili powder to taste
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper adjust to taste
  • 1 4-ounce can green chiles do not drain
  • 2 tablespoons olive oil or avocado oil
  • 3 pounds boneless skinless chicken breasts, thighs, or a mix
  • 1 ½ cups salsa verde
  • 1 large lime juice of (to taste)
  • ¼ cup chopped cilantro for garnish

Instructions
 

  • Combine onion, green bell pepper, jalapeño, garlic, cumin, chili powder, green chiles, and oil in a slow cooker.
  • Place chicken on top of the vegetable mixture.
  • Pour salsa verde over the chicken, cover, and cook on HIGH for 3 to 4 hours or LOW for 6 to 8 hours.
  • Shred the chicken with two forks and return it to the slow cooker.
  • Stir in lime juice and cilantro, adjusting seasoning as desired.
  • Serve in tacos, burritos, or over rice.

Notes

For a spicier dish, add more jalapeño or chili powder. For a milder option, substitute jalapeño with Hatch green chiles or poblano peppers.
