Ingredients
  

  • 8 ounces uncooked pasta (penne, spaghetti, or rotini)
  • 2 tablespoons butter
  • 2-3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 14 ounce can tomato sauce
  • ¾ cup heavy cream
  • ¼ teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese Freshly grated

Instructions
 

  • Boil a large pot of salted water and cook pasta until al dente. Reserve 1/2 cup of pasta water before draining.
  • Melt butter in a large skillet or Dutch oven over medium-high heat. Add minced garlic and sauté for 1 minute until fragrant.
  • Stir in tomato paste and cook for another minute. Add tomato sauce and heavy cream; stir until smooth.
  • Simmer on medium-low heat for 5 to 7 minutes. Season with salt and pepper. Add a pinch of sugar if the sauce is too acidic.
  • Toss cooked pasta with the sauce. Add reserved pasta water if the sauce is too thick.
  • Serve immediately, topped with grated Parmesan cheese.

Notes

Use full-fat heavy cream to prevent curdling. Do not burn garlic to avoid bitterness. Add a pinch of sugar to balance acidity if needed. Use oregano or fresh basil as alternatives to Italian seasoning. Add red pepper flakes with tomato paste for heat.
