Ingredients
  

  • 1 pound asparagus ends trimmed
  • 1 tablespoon olive oil or coconut oil as a substitute
  • 1 clove garlic minced (for asparagus)
  • ¼ teaspoon salt (for asparagus)
  • teaspoon pepper (for asparagus)
  • 1 ½ pounds medium uncooked peeled shrimp deveined
  • 1 tablespoon olive oil (for shrimp)
  • 2-3 cloves garlic minced (for shrimp)
  • ½ teaspoon salt (for shrimp)
  • ¼ teaspoon paprika
  • teaspoon pepper (for shrimp)
  • 1/8-1/4 teaspoon red pepper flakes
  • 3 tablespoons fresh parsley chopped
  • 1 ½ tablespoons lemon juice or more to taste
  • 3 tablespoons butter cubed

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Line a jelly roll pan with foil and spray lightly with cooking spray.
  • Toss asparagus with olive oil, garlic, salt, and pepper, then arrange in a single layer.
  • Roast asparagus for 4-6 minutes.
  • Prepare shrimp by removing tails.
  • Move asparagus to one side, add shrimp to the other side, and toss with olive oil, garlic, salt, paprika, pepper, red pepper flakes, and parsley.
  • Top asparagus with 1 tablespoon of butter and shrimp with 2 tablespoons.
  • Roast for an additional 6 minutes until shrimp are opaque.
  • Drizzle with lemon juice and adjust seasoning before serving.

Notes

This recipe can be prepared in approximately 15 minutes total. Olive oil can be substituted with coconut oil if needed. Serve with pasta or rice for a complete meal.
