Ingredients
  

  • 2 lbs carrots, peeled and cut into 4-inch sticks
  • 2 tbsp olive oil
  • 1 tsp Kosher salt
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 1 tbsp fresh parsley, chopped

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Arrange carrot sticks on a baking sheet, drizzle with olive oil, and sprinkle with salt.
  • Bake for 45 minutes, turning the carrots 3-4 times for even browning.
  • Melt butter in a saucepan over low heat.
  • Add garlic to the melted butter and cook until fragrant, then stir in honey and whisk until thickened.
  • Transfer baked carrots to a serving bowl and pour the honey garlic butter over them.
  • Warm the glaze briefly before drizzling it over the carrots.
  • Serve immediately.
