Ingredients
  

  • 1 pound asparagus ends trimmed
  • 2 tablespoons olive oil divided
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon ground pepper
  • ¼ cup parmesan cheese finely grated
  • ¼ cup panko breadcrumbs
  • Chopped fresh basil or parsley optional, for garnish

Instructions
 

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Trim the asparagus and place it on the baking sheet, drizzling with olive oil and seasoning before tossing to coat.
  • Mix parmesan cheese and panko breadcrumbs with remaining olive oil until combined.
  • Spread the parmesan-panko mixture over the asparagus evenly.
  • Roast for 4-6 minutes, then broil for 1-2 minutes until golden brown.
  • Garnish with parsley or basil and serve immediately.

Notes

Use fresh asparagus that is bright green and firm. For uniform cooking, select asparagus spears of similar size. Ensure each spear is well-coated with oil and seasonings before topping with the parmesan mixture. Freshly grated parmesan is recommended over pre-packaged options.
