Ingredients
  

  • 1 tablespoon olive oil
  • 1 ½ cups long grain white rice
  • 2 ¼ cups water
  • 1 teaspoon salt
  • zest of one lime
  • ½ cup chopped cilantro lightly packed
  • 1 recipe 20 Minute Cuban Black Beans
  • 1–2 avocados
  • 1 pint cherry tomatoes halved or quartered
  • 1 jar salsa recommended: corn salsa from Trader Joe's
  • shredded cheese optional

Instructions
 

  • Heat olive oil in a medium saucepan, add rice, and cook until toasty.
  • Add water, salt, and lime zest; bring to a boil, then simmer covered.
  • Cook rice for 15 minutes, let sit covered for 10 minutes, then fluff with cilantro.
  • Portion rice into containers, add black beans, top with salsa, cheese, and tomatoes.
  • Store meal prep bowls in the refrigerator.

Notes

The meal prep bowls can be stored in the refrigerator for up to 1 week. Add avocado just before serving to prevent browning.
