Ingredients
  

  • 4 cups cubed watermelon
  • 3 cups sliced strawberries
  • 1 English seedless cucumber chopped
  • ¼ cup roughly chopped mint leaves
  • 1 tablespoon olive oil
  • 1 lime juice of
  • 1 to 2 teaspoons honey
  • Sea salt to taste
  • ½ cup crumbled feta cheese
  • Mint leaves for garnish, optional

Instructions
 

  • Prepare the salad components by cubing watermelon, slicing strawberries, and chopping the cucumber.
  • In a large bowl, combine the prepared watermelon, strawberries, cucumber, and mint leaves.
  • In a separate small bowl, whisk together the olive oil, lime juice, and honey to create the dressing.
  • Drizzle the prepared dressing over the salad ingredients and gently toss to ensure everything is evenly coated.
  • Season the salad with sea salt to your preference.
  • Finish by topping the salad with crumbled feta cheese and additional mint leaves for garnish, if desired.

Notes

Best served the day of preparation. For advance preparation, store cut produce separately in the fridge and whisk the dressing ahead of time. This salad can be made vegan by omitting honey and feta cheese, and basil can be used as an alternative to mint.
