  • 1 cup blueberries (fresh or frozen)
  • ½ cup water
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • ¼ teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions
 

  • Wash blueberries and remove any stems.
  • Combine blueberries, water, sugar, cornstarch slurry, vanilla extract, and lemon juice in a pot.
  • Bring the mixture to a boil over medium-high heat.
  • Reduce heat to low and simmer until the sauce thickens, approximately 3-5 minutes.
  • Serve warm or cooled.

Notes

Frozen blueberries can be used; thaw in a bowl of cold water before cooking. Store leftovers in an airtight container in the refrigerator for up to one week. Sauce can be frozen. Cool completely before transferring to airtight containers or freezer bags. Thaw before rewarming. Versatile topping for pancakes, waffles, oatmeal, yogurt, ice cream, or cheesecake.
