Ingredients
  

  • 2-3 pounds boneless skinless chicken breasts
  • 1 ounce package mild taco seasoning or homemade taco seasoning
  • 1 10-ounce can mild diced tomatoes and green chiles with juice
  • 1 4-ounce can diced green chiles
  • 1 teaspoon kosher salt
  • ½ teaspoon cracked black pepper
  • 1 15-ounce container salsa con queso
  • Street taco size flour tortillas
  • Optional garnishes shredded lettuce, sour cream, diced tomatoes, chopped cilantro

Instructions
 

  • Lightly coat the inside of a slow cooker with nonstick spray and place the chicken breasts at the bottom.
  • Sprinkle taco seasoning, kosher salt, and black pepper over the chicken.
  • Pour diced tomatoes and green chiles over the chicken and cook on high for 4 hours.
  • After cooking, shred the chicken with two forks and mix with salsa con queso.
  • Serve the mixture in flour tortillas with your choice of garnishes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave until heated through. Adjust the heat level of the chiles to your preference.
