Ingredients
  

  • 1 pound fresh asparagus about 24 medium thick spears
  • Olive oil spray
  • 12 slices prosciutto
  • ¼ teaspoon ground black pepper
  • 2 tablespoons grated parmesan cheese or parmesan shavings
  • 1 tablespoon chopped parsley optional for serving

Instructions
 

  • Preheat the oven to 425°F and line a large sheet pan with foil and a cooling rack.
  • Trim the tough ends of the asparagus and coat the spears with olive oil spray.
  • Cut the prosciutto slices in half and wrap each half around the asparagus.
  • Place the wrapped asparagus on the wire rack in a single layer.
  • Spritz with oil and sprinkle with black pepper.
  • Bake for 8 to 10 minutes until tender-crisp.
  • Transfer to a platter and garnish with parmesan and parsley.

Notes

For extra crispiness, bake for a few additional minutes. If using pencil-thin asparagus, bundle 2-3 stalks together for balance with the prosciutto. Grilling is an option; place the asparagus perpendicular to the grill grates and flip halfway through cooking.
