Ingredients
  

  • 1 cup diced dill pickles
  • 1 cup diced cucumber
  • 1 cup diced red bell pepper
  • 1 cup diced tomato
  • ½ cup diced red onion
  • ¼ cup diced jalapeno adjust to taste
  • 1-2 cloves minced garlic
  • 1 tablespoon chopped fresh dill
  • ¼ cup pickle brine
  • Juice of half lime optional
  • Salt to taste

Instructions
 

  • Dice all vegetables into small pieces or to your preferred size.
  • In a large bowl, combine the diced pickles, cucumber, red bell pepper, tomato, onion, jalapeno, and garlic.
  • Add dill, pickle brine, and lime juice; mix thoroughly and season with salt.
  • Serve immediately or refrigerate until ready to serve.

Notes

Adjust the texture by dicing vegetables smaller or leaving them chunkier. Leftovers can be stored in an airtight container for about 4-5 days.
