Ingredients
  

  • 1 cup Old Fashioned rolled oats
  • 2 cups water
  • 1 cup diced fresh peaches approximately 1 large peach
  • 2 to 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • teaspoon kosher salt
  • 2 tablespoons heavy cream or whole milk
  • Toppings: maple syrup, sliced or diced fresh peaches, chopped pecans or almonds

Instructions
 

  • Combine oats, water, peaches, maple syrup, vanilla extract, cinnamon, and salt in a saucepan.
  • Stir the mixture and bring to a simmer.
  • Cook for 5 to 7 minutes until the oats are tender and the mixture has thickened.
  • Remove from heat and stir in the cream.
  • Taste and add additional maple syrup if desired (up to 1 tablespoon).
  • Serve topped with a drizzle of maple syrup, chopped nuts, sliced peaches, and a small drizzle of cream.

Notes

Old Fashioned rolled oats are recommended for better texture compared to instant or quick-cooking oats. Fresh peaches are preferred; frozen peaches should be defrosted until soft enough to dice and added with their liquid, potentially requiring additional sweetener due to tartness.
