Ingredients
  

  • 1 premade pie crust refrigerated or frozen, or homemade
  • 6 to 7 ripe peaches peeled and sliced (approximately 5 cups)
  • 2 tablespoons lemon juice
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup all-purpose flour
  • Pinch ground nutmeg
  • Pinch cinnamon
  • 1 egg beaten with 1 tablespoon water for egg wash
  • salt

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the sliced peaches with lemon juice, granulated sugar, brown sugar, flour, nutmeg, cinnamon, and salt. Toss gently to ensure the peaches are evenly coated.
  • Press half of the pie dough into the bottom of a pie plate. Keep the remaining dough refrigerated for the top crust.
  • Pour the prepared peach filling into the bottom crust.
  • Roll out the remaining dough. You can place it as a full top crust with vents cut for steam, or cut it into strips to create a lattice pattern.
  • Brush the top crust with the egg wash mixture and sprinkle with a little sugar for a golden finish.
  • Bake for 35 to 45 minutes, or until the crust is golden brown and the filling is visibly bubbling.

Notes

For easier peeling, blanch peaches in boiling water for one minute, then plunge into ice water. Nectarines can be substituted for peaches, and frozen peaches can be used if fully thawed to manage liquid.
