Ingredients
  

  • 1 stick butter, melted
  • 1 cup all-purpose flour
  • ½ cup pecans, finely chopped
  • 5 6 fresh peaches, sliced
  • 1 ½ cups water
  • 1 cup granulated sugar
  • 4 Tbsp cornstarch
  • Pinch salt
  • 1 pkg (3 oz) peach Jello gelatin mix
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 8 oz Cool Whip

Instructions
 

  • Combine flour, melted butter, and finely chopped pecans in a bowl. Press the mixture into a greased 9x13-inch baking pan. Bake at 325°F for 25 minutes. Allow the crust to cool completely.
  • In a saucepan over medium heat, combine water, granulated sugar, cornstarch, and salt. Stir constantly until the mixture boils. Cook until thickened, then stir in the peach Jello mix and cook until dissolved. Remove from heat and allow to cool.
  • Ensure cream cheese is at room temperature (30 minutes to 1 hour). Mix the cream cheese, powdered sugar, and Cool Whip until smooth.
  • Spread the cream cheese mixture evenly over the cooled crust. Arrange the sliced peaches on top of the cream cheese layer.
  • Pour the peach Jello mixture over the peaches when it is cooled or slightly warm.
  • Refrigerate the dessert for at least 2 hours or overnight. Serve cold.
