Equipment

  • oven
  • 9x13-inch baking dish
  • aluminum foil
  • gallon-sized zip-top bag (optional)
  • baking sheet (optional)
  • broiler (optional)

Ingredients

  • 2.5–3 lbs country style pork ribs (shoulder/butt cut)
  • 3 tbsp brown sugar
  • 2 tsp kosher salt
  • 1 tsp ground mustard
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp cayenne pepper
  • ¼ cup BBQ sauce optional

Instructions

  • Preheat your oven to 325°F (163°C) and line a 13"x9" baking dish with aluminum foil.
  • Combine brown sugar, salt, mustard, paprika, onion powder, garlic powder, black pepper, and cayenne pepper in a bowl.
  • Thoroughly coat the country-style pork ribs with the spice rub, using a zip-top bag for easier mixing if desired.
  • Place the seasoned ribs in the prepared baking dish, ensuring the fattier side faces up and they are spaced apart.
  • Cover the baking dish tightly with aluminum foil.
  • Bake on the middle rack for 2.5 hours, or until the meat is tender.
  • For an optional glaze, transfer the ribs to a foil-lined baking sheet, brush with BBQ sauce, and broil for about 5 minutes until caramelized.
  • Serve the ribs immediately, spooning over any reserved pan juices.

Notes

Ensure you are using shoulder/butt cut country-style ribs, as loin cuts can be leaner and may result in dry meat. This recipe was updated in July 2023 to favor broiling for caramelization over a longer oven bake with sauce.
