Oven Baked Chicken Fajitas

These oven baked chicken fajitas are a quick and delicious meal, combining tender chicken with colorful peppers and onions, all wrapped in warm tortillas.

Ingredients
  

  • 1 ½ lbs chicken breast tenders
  • 2 large bell peppers any color
  • 1 yellow or red onion
  • 1 tbsp olive oil
  • 1 packet fajita seasoning mix
  • 1 lime
  • Tortillas
  • Optional toppings shredded cheese, avocado, cilantro, sour cream, etc.

Instructions
 

  • Preheat the oven to 425°F and grease a large baking sheet.
  • Slice the bell peppers and onion into strips, then combine with chicken, olive oil, and fajita seasoning in a bowl.
  • Spread the mixture on the baking sheet and bake for 15-20 minutes, broiling for 2 minutes for browning.
  • Wrap tortillas in foil and warm them in the oven during the last 5 minutes of cooking.
  • Squeeze lime juice over the fajitas and serve in warm tortillas with desired toppings.

Notes

For even cooking, cut chicken into thick strips. A homemade fajita seasoning can be made if preferred.
