Ingredients
  

  • 2 Tbsp butter
  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 2 tsp Italian seasoning
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 lb uncooked penne pasta
  • 1 cup whole milk
  • 4 oz shredded Parmesan cheese
  • ¼ cup chopped Italian parsley

Instructions
 

  • Melt butter in a large skillet over medium-high heat, then add chicken seasoned with salt and pepper.
  • Brown chicken for 4-5 minutes, add Italian seasoning and garlic, then set aside.
  • Pour in chicken broth, water, and pasta; cook on high for 15 minutes, stirring frequently.
  • Add milk and cook for an additional 5 minutes until pasta is al dente.
  • Return chicken and Parmesan to the skillet, stir, and heat through before serving with parsley.

Notes

Serve with garlic bread or a salad for a complete meal. For extra flavor, add a splash of white wine or lemon zest during cooking.
