  • 4 fresh ripe peaches
  • 1 teaspoon fresh lemon zest
  • 6 tablespoons granulated sugar, divided
  • 1 ΒΌ cups cold heavy cream

Instructions
 

  • Cut peaches into half-inch wedges and gently peel off the fuzzy skin.
  • In a medium mixing bowl, combine the peaches, lemon zest, 5 tablespoons of sugar, and salt. Mix well and set aside.
  • In a separate bowl, combine the cold heavy cream, 1 tablespoon of sugar, and vanilla extract. Whip lightly with a hand mixer until fluffy but slightly pourable (not firm).
  • Spoon the peaches evenly into 4 large or 6 small serving cups. Pour the accumulated peach juices over the fruit.
  • Spoon the whipped cream over the peaches. Tap the cups gently to help the cream settle between the fruit.
  • Cover each cup with plastic wrap and refrigerate for at least one hour. Remove plastic and garnish before serving.

- Canned peaches can be substituted; drain well and skip adding sugar directly to the fruit as they are already sweet.
