  • 3 large eggs
  • 1 /2 cup vegetable oil
  • 1 /2 cup lightly packed brown sugar

  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1 /2 tsp baking soda
  • 1 /2 tsp salt
  • 2 cups all-purpose flour
  • 2 lightly packed cups shredded zucchini shred right before adding
  • 2 /3 cup chopped walnuts optional

Instructions
 

  • Preheat oven to 350°F.
  • Butter a standard 9x5 loaf pan and line with parchment paper for easy removal.
  • In a large bowl, whisk eggs, oil, sugars, cinnamon, nutmeg, and vanilla until well incorporated.
  • Mix in baking powder, baking soda, and salt.
  • Stir in flour until almost fully incorporated.
  • Fold in shredded zucchini and walnuts. Stop mixing when no dry flour remains and zucchini is evenly dispersed. Do not overmix.
  • Pour batter into prepared pan and smooth the top.
  • Bake for approximately 60 minutes.
  • Test for doneness by inserting a toothpick near the center; it should come out clean or with moist crumbs.
  • Cool on a rack for 10-15 minutes.
  • Run a blunt knife around the edges to loosen, then invert onto a serving plate.
  • Slice and serve warm with butter or cream cheese.

Notes

- Shred zucchini using a food processor for dry shreds; avoid box graters which produce watery shreds.
- Use young, small to medium zucchinis for best flavor and less seediness.
- Do not peel the zucchini.
- To prevent over-browning, tent the bread with foil for the last 10 minutes of baking.
- When testing for doneness, insert the toothpick at an angle just outside the center crack to avoid false positives from sticky batter.
