Ingredients
  

  • 4 cups fresh or frozen blueberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Cobbler Topping

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • additional sugar for topping

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine blueberries, 1 cup of sugar, cornstarch, and lemon juice. Toss gently to ensure the blueberries are evenly coated.
  • In a separate bowl, whisk together the all-purpose flour, baking powder, and salt for the cobbler topping.
  • Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until just combined to form a batter.
  • Grease a 9x13 inch baking dish. Pour half of the batter into the prepared dish and spread it evenly.
  • Spoon the prepared blueberry mixture evenly over the batter layer in the baking dish.
  • Pour the remaining batter over the fruit, making sure some of the blueberries are still visible through the topping.
  • Sprinkle a little extra sugar over the top of the cobbler for a sweet crust.
  • Bake for 30-35 minutes, or until the topping is golden brown and the blueberry filling is bubbling.
  • Let the cobbler cool for 10-15 minutes before serving to allow the filling to set slightly.
