Ingredients
  

  • 3 oz lemon jello powder
  • 1 cup boiling water
  • 3 cups graham cracker crumbs (2 sleeves of crackers)
  • ½ cup melted butter
  • 8 oz full-fat cream cheese softened
  • 1 cup granulated sugar
  • 5 tablespoons lemon juice
  • 10 oz evaporated milk well chilled or 1½ cups heavy cream

Instructions
 

  • Dissolve the lemon jello powder in boiling water and let it cool.
  • Mix 2 cups of graham cracker crumbs with melted butter and press into a 9×13-inch pan.
  • Beat the softened cream cheese and sugar until smooth, then add lemon juice.
  • Stir in the cooled jello mixture into the cream cheese mixture.
  • Whip the chilled evaporated milk or heavy cream until fluffy.
  • Fold the whipped cream into the cream cheese mixture gently.
  • Spread the filling over the crust and top with remaining graham cracker crumbs.
  • Chill for at least 2 hours before serving.

Notes

Use full-fat cream cheese for the best texture and flavor; avoid whipped varieties. Ensure the cream cheese is well softened for a smooth texture. For a thicker cheesecake, use an 8-inch square pan instead of a 9×13-inch pan. Experiment with different flavors of jello for variations.
