No Bake Berry Icebox Cake: A Delightfully Easy Dessert

Ingredients
  

  • 3.4 ounces instant vanilla pudding mix
  • 8 ounces softened cream cheese
  • 1 cup milk
  • 8 ounces Cool Whip whipped topping
  • 2 cups hulled and sliced strawberries
  • 1 cup blueberries
  • Fresh mint for garnish

Instructions
 

  • Beat softened cream cheese and instant vanilla pudding mix together in a large bowl until smooth.
  • Gradually add milk while mixing until fully incorporated.
  • Fold in Cool Whip using a rubber spatula until evenly combined.
  • Arrange graham crackers in the bottom of an 8x8-inch baking dish, breaking them as needed to cover the base without overlapping.
  • Spread one-third of the pudding mixture over the crackers.
  • Top with one-third of the strawberries and blueberries.
  • Repeat the layering process two more times (crackers, pudding, berries) until the dish is full.
  • Cover the top with plastic wrap and refrigerate for a minimum of 4-6 hours, or preferably overnight, to allow it to set.
  • Garnish with fresh mint and slice into 6 servings before serving.

Notes

Chill the cake for a minimum of 4-6 hours to allow it to set and prevent the crackers from becoming soggy. 6 hours is the recommended sweet spot for texture. Overnight chilling is also acceptable. Substitutions: Vanilla wafers or chocolate graham crackers can replace standard graham crackers. Other fresh berries such as blackberries or raspberries can be used instead of strawberries and blueberries. Garnish with fresh mint immediately before serving.
