  • ¾ cup sugar for batter
  • ½ cup butter softened

  • 1 tsp baking powder

  • 1 tbsp cornstarch

Batter

  • ¾ cup sugar for batter
  • ½ cup butter softened
  • 1 cup flour
  • 1 tsp baking powder
  • tsp salt for batter
  • ½ cup milk

Instructions
 

  • Preheat your oven to 375°F and spray a baking pan with nonstick cooking spray.
  • Arrange the sliced peaches in the bottom of the baking dish, ensuring canned peaches are well-drained.
  • In a medium bowl, cream together 3/4 cup sugar and 1/2 cup softened butter until the mixture is creamy.
  • Add 1 cup flour, 1 tsp baking powder, 1/8 tsp salt, and 1/2 cup milk to the butter mixture. Stir until a batter forms, adding more milk if it's too thick to spread.
  • Evenly spread the batter over the peaches in the baking dish.
  • In a separate bowl, combine 1/2 cup sugar, 1 tbsp cornstarch, and a pinch of salt. Stir in 1 tsp cinnamon if desired.
  • Microwave 1/4 cup water for 1 minute until it reaches a boiling point.
  • Pour the boiling water over the sugar mixture, making sure all sugar grains are covered.
  • Evenly sprinkle the wet sugar mixture over the batter layer.
  • Bake at 375°F for 45 minutes, or until a toothpick inserted into the center comes out clean.

  • To remove skin from fresh peaches, blanch them in simmering water for 30 seconds, then transfer to ice water before peeling.
