Ingredients
  

  • ½ package rice noodles
  • 1 pound ground chicken or substitutes like chicken thighs, chicken breasts, ground beef, pork, or tofu
  • 1 tablespoon vegetable oil
  • 2 tablespoons sesame oil
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger grated (or 1 teaspoon ground ginger)
  • 2 green onions minced
  • 2 tablespoons low sodium soy sauce or coconut aminos for gluten-free
  • 6-8 leaves iceberg or butter lettuce
  • Sweet chili sauce optional

Instructions
 

  • Heat oil in a saucepan and fry a handful of rice noodles until puffed, then remove to drain.
  • In a skillet, heat vegetable and sesame oils, then cook ground chicken until nearly done.
  • Add garlic, ginger, green onions, and soy sauce, cooking until fragrant, then remove from heat.
  • Spoon the chicken mixture into lettuce leaves, top with fried noodles, and add sweet chili sauce if desired.

Notes

The chicken filling can be prepared in advance and stored in the refrigerator for up to 5 days. Assemble wraps just before eating for the best texture.
