Equipment

  • Citrus juicer
  • Mesh strainer
  • Glass pitcher with lid

Ingredients

  • 1 ¼ cups fresh lemon juice approximately 6-8 fresh lemons or store-bought pure lemon juice
  • ½ cup raw honey
  • 2 quarts water divided: 2 cups warm, 1 ½ quarts cold

Instructions

  • Gently warm 2 cups of water and stir in raw honey until completely dissolved. Squeeze lemons, strain the juice, and add it to the honey water mixture.
  • Add the remaining 1 ½ quarts of cold water to the pitcher. Stir gently to combine and chill or serve immediately over ice. Garnish with a lemon slice and fresh mint.

Notes

Roll lemons on the counter before juicing to extract more juice. Use slightly warm water to dissolve honey to preserve live enzymes. Adjust honey quantity based on lemon tartness. Stir before serving as pulp may settle.
