Ingredients
  

  • 1 ½ pounds boneless skinless chicken thighs
  • 1 ½ cups chicken broth low or no sodium can be used
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • ¼ teaspoon salt optional
  • 3 cloves garlic minced
  • 1 tablespoon lemon zest from one lemon
  • 2-3 tablespoons lemon juice from one lemon
  • ½ cup heavy cream
  • 1 tablespoon chopped parsley optional, for garnish

Instructions
 

  • Mix chicken thighs, chicken broth, olive oil, Dijon mustard, salt, garlic, lemon zest, and lemon juice in a large bag or bowl.
  • Seal the bag and marinate in the refrigerator for at least 20 minutes, reserving the marinade.
  • Cook the marinated chicken in a skillet over medium-high heat for 5 to 6 minutes on each side until golden brown.
  • Remove the chicken and boil the reserved marinade in the skillet for a few minutes, then simmer until reduced by half.
  • Whisk in the heavy cream, return the chicken to the skillet, and heat for an additional 1-2 minutes.
  • Serve garnished with chopped parsley and fresh lemon slices.

Notes

Boiling the marinade makes it safe to consume as a sauce. Use fresh lemon juice and garlic for the best flavor.
