Ingredients
  

  • 1 pound asparagus trimmed
  • 3 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 whole lemon zest and juice
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • 2 tablespoons grated Parmesan cheese optional
  • Fresh parsley chopped for garnish

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Mix asparagus with olive oil, garlic, lemon zest, lemon juice, salt, pepper, and red pepper flakes in a bowl.
  • Spread asparagus on the baking sheet in a single layer.
  • Roast for 15-20 minutes, tossing halfway through.
  • Sprinkle Parmesan cheese over asparagus during the last 5 minutes if desired.
  • Garnish with parsley and serve warm.

Notes

For a lighter version, reduce olive oil and use low-fat cheese. Seasonal variations can include adding peas or radishes in spring.
