Ingredients
  

  • ¼ cup cottage cheese blended for smooth texture
  • 1 large egg
  • 2 tablespoons maple syrup or honey or sugar
  • 3 tablespoons all-purpose flour or substitutes
  • ½ teaspoon baking powder
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon vanilla extract optional
  • salt Pinch
  • 1 teaspoon butter or oil optional

Instructions
 

  • Use a microwave-safe mug and optionally grease it.
  • Blend or mash the cottage cheese until mostly smooth.
  • Whisk together the egg, cottage cheese, sweetener, lemon juice, and vanilla in the mug.
  • Add flour, baking powder, salt, and lemon zest, and stir until just combined.
  • Microwave on high for 60 seconds, checking and continuing in 10–15 second intervals until set.
  • Allow to rest for 1 minute before consuming.
  • Add toppings if desired and enjoy directly from the mug.

Notes

Microwave times can vary; start with less time to prevent overcooking. For a stronger lemon flavor, increase the zest but avoid adding more juice. Ricotta or Greek yogurt can be used in place of cottage cheese. Best enjoyed immediately while warm.
