Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup granulated sugar (for the base)
  • ¼ teaspoon salt
  • ½ cup cold butter, cubed
  • 1 cup granulated sugar (for the filling)
  • 2 tablespoons all-purpose flour (for the filling)
  • Zest of 4 small to medium lemons
  • Juice of 4 small to medium lemons
  • 2 large eggs
  • Powdered sugar (for dusting)

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9 x 13-inch pan with butter.
  • Mix together the flour, sugar, and salt in a bowl.
  • Blend the cold, cubed butter into the dry ingredients until it resembles lumpy sand.
  • Press the mixture into the bottom of the pan and bake for 20 minutes until slightly golden.
  • Prepare the filling by whisking together sugar and flour in a bowl.
  • Zest and juice the lemons, extracting as much juice as possible.
  • Whisk the eggs into the sugar and flour mixture, then stir in the lemon juice and zest.
  • Pour the filling over the baked crust and return to the oven for 18 to 20 minutes until set.
  • Cool slightly, then refrigerate for at least 2 hours to set completely.
  • Dust with powdered sugar before slicing into squares.

Notes

Allow the lemon bars to cool completely before refrigerating for best results. Use a bench scraper or knife to cut into squares. The bars have a sweet and tangy flavor with a rich texture.
