Ingredients
  

  • 4 medium to large zucchini
  • 3 cups sugar-free marinara sauce
  • 15 ounces ricotta cheese
  • 8 ounces cream cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 ½ cups grated parmesan cheese
  • 2 large eggs
  • 4 teaspoons dried Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon crushed red pepper optional
  • Salt

For Serving

  • Extra mozzarella and parmesan optional

Instructions
 

  • Preheat your oven to 400°F and prepare a 9x13-inch baking dish by spreading the marinara sauce evenly on the bottom.
  • Slice zucchini into long, paper-thin strips. Generously salt the strips to draw out moisture and let them rest.
  • In a large bowl, combine ricotta cheese, cream cheese, mozzarella, parmesan, eggs, Italian seasoning, garlic powder, and crushed red pepper. Mix until well combined.
  • Pat the zucchini strips dry with paper towels to remove excess moisture. Place about 2 teaspoons of the cheese filling on one end of each zucchini strip and roll it up.
  • Arrange the rolled zucchini in the prepared baking dish, seam-side up, packing them snugly. Bake for 25 minutes, or until the cheese is golden brown around the edges.
  • Serve warm, optionally topped with extra mozzarella and parmesan cheese.

  • Leftovers can be stored in an airtight container in the refrigerator for up to 5 days and reheated in the microwave or oven.

Notes

Salting the zucchini strips before cooking is crucial to prevent a watery texture. For a heartier meal, consider using a meat sauce instead of marinara.
