Ingredients
  

  • 4 cups shredded zucchini approx. 4 medium zucchini
  • ¼ tsp salt
  • ½ cup diced yellow onion
  • 2 tbsp minced garlic
  • 2 eggs beaten
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¾ cup grated Parmesan cheese divided
  • ½ cup crushed pork rinds or Parmesan cheese crisps
  • 3 tbsp butter

For the Topping

  • ¼ cup grated Parmesan cheese remaining
  • 3 tbsp butter melted
  • ½ cup crushed pork rinds or Parmesan cheese crisps

Instructions
 

  • Preheat your oven to 375°F and grease an 8x8 inch baking dish.
  • Squeeze excess water from shredded zucchini using cheesecloth or a kitchen towel.
  • Combine drained zucchini with onion, garlic, beaten eggs, mozzarella, cheddar, and 1/2 cup of Parmesan cheese. Mix well.
  • Transfer the mixture to the prepared baking dish and bake for 20 minutes.
  • While the casserole bakes, melt butter and stir in the pork rinds and remaining 1/4 cup Parmesan cheese.
  • Remove the dish from the oven and sprinkle the butter mixture evenly over the top.
  • Return to the oven for 5-8 minutes until the topping is browned and crispy.
  • Serve hot, seasoning with additional salt and pepper if desired.

Notes

  • For a different texture, use fresh spiralized zucchini and chop it into shorter pieces.
  • If you prefer not to use garlic, substitute with 2-3 teaspoons of Italian seasoning.
  • To make this a full meal, add cooked cubed or shredded chicken breast.
  • Taste and adjust seasoning with salt and pepper before serving.
