Ingredients
  

  • 1 – 2 cups watermelon
  • ½ cup blueberries
  • ¼ cup feta cheese
  • 2 cups mixed greens optional
  • 1 – 2 teaspoons to 1 tablespoon balsamic reduction
  • 1 – 2 sprigs mint leaves

Instructions
 

  • Wash, peel, and cube the watermelon.
  • Wash and pat dry the blueberries.
  • Clean, trim, and dry the mixed greens if using.
  • Layer the mixed greens at the bottom of a salad bowl.
  • Add the watermelon cubes on top of the greens.
  • Add the blueberries to the salad.
  • Sprinkle the feta cheese over the fruit and greens.
  • Garnish with fresh mint leaves.
  • Drizzle the entire salad with balsamic reduction just before serving.

Notes

Use fresh ingredients for optimal flavor. If using salad greens, serve immediately to prevent wilting. Balsamic reduction can be homemade or substituted with citrus vinaigrette.
