Ingredients
  

  • 4 cups all-purpose flour or variations for whole grain
  • 2 teaspoons Diamond Crystal kosher salt or to taste
  • 1 tablespoon sugar
  • 1 teaspoon baking soda
  • 1 cup dried currants optional
  • 1 egg
  • 1.75 cups buttermilk see notes for homemade
  • 2 tablespoons melted butter
  • room temperature butter for finishing
  • flour for dusting

Instructions
 

  • Preheat the oven to 400ºF (200ºC) and whisk together the dry ingredients in a large bowl.
  • Beat the egg and buttermilk together, stir in melted butter, and combine with the dry ingredients until just mixed.
  • Shape the dough into a ball, place it in a greased skillet, sprinkle with flour, and score an X on top.
  • Bake for 35 to 40 minutes until golden and cool for 15 minutes before slicing.

Notes

For homemade buttermilk, combine 2 tablespoons of vinegar or lemon juice with milk and let sit for 5-10 minutes. Store in an airtight container for 3-4 days or freeze for 2-3 months.
