  • ½ pound dry black beans
  • 1 cup water
  • ½ cup chicken stock
  • ½ onion, diced
  • 1 garlic clove, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil

Instructions
 

  • Add all ingredients to the Instant Pot.
  • Seal the steam valve and close the lid.
  • Set the Instant Pot to manual mode for 26 minutes.
  • After cooking, allow the pressure to release naturally for 16 minutes.
  • Switch the steam valve from sealing to venting to release any remaining pressure, then remove the lid.

Notes

Allowing the pressure to release naturally is crucial to prevent foam from spraying out. The beans can be served as a side dish with various Mexican entrees.
