Ingredients
  

  • 1 Corned Beef Brisket (3-4 pounds, flat cut preferred)
  • 3 cups water
  • 1 tablespoon butter
  • 1 cinnamon stick
  • ΒΌ cup pickling spice
  • 9-12 small red or white potatoes
  • 5 carrots
  • 1 green cabbage

Instructions
 

  • Place the corned beef in the Instant Pot with the fat side up, then add water, butter, and a cinnamon stick.
  • Submerge the pickling spice in a tea strainer in the water next to the beef.
  • Secure the lid and set the vent to 'sealing', then select 'Manual' and cook on High Pressure for 60 minutes.
  • After cooking, perform a quick release and prepare the vegetables while the steam escapes.
  • Remove the beef, cover it with foil, and add the potatoes and carrots to the pot.
  • Arrange the cabbage wedges on top, secure the lid, and cook on High Pressure for an additional 5 minutes.
  • Perform a quick release again and serve the vegetables alongside the sliced corned beef.
  • Use the leftover broth for soup or as a hot drink.

Notes

Leftover corned beef can be used for sandwiches or hash. Clean the Instant Pot thoroughly after cooking to remove strong odors, especially by removing and cleaning the ring.
