Ingredients
  

  • 3 medium vine-ripened tomatoes diced
  • ½ large red onion diced
  • cup fresh cilantro chopped
  • 1 jalapeño pepper diced, seeds removed
  • 1 14 oz can diced tomatoes with green chilis
  • 1 lime Juice of 1
  • 1 tsp sea salt plus more to taste
  • 1 tsp chipotle powder
  • 1 tsp cumin
  • 2 pounds boneless, skinless chicken breast

Instructions
 

  • Blend diced tomatoes, red onion, cilantro, jalapeño, canned tomatoes, lime juice, sea salt, and chipotle powder until slightly chunky.
  • Season chicken with cumin and salt, place in the Instant Pot, and pour salsa over the chicken.
  • Close the lid, set the valve to sealed, and cook on manual for 8 minutes.
  • Allow natural pressure release, shred chicken, and adjust salt to taste before serving.

Notes

This recipe can also be made in a slow cooker for similar results and is versatile with various sides.
