Indulgent Cinco de Mayo Desserts You’ll Adore

Ingredients
  

  • 1 can evaporated milk
  • 1 can sweetened condensed milk
  • 6 limes (juice) approximately 3/4 cup
  • 2 packages Maria cookies or graham crackers
  • 1 cup cold heavy cream
  • 2 tablespoons granulated sugar to taste
  • ½ teaspoon pure vanilla extract
  • lime zest optional garnish

  • berries optional garnish
  • Maria cookie crumbs optional garnish

Instructions
 

  • Line a 6 x 3 inch springform pan with parchment paper, extending it about 1/4 inch above the sides.
  • Blend evaporated milk, sweetened condensed milk, and lime juice until smooth.
  • Spread 2-3 tablespoons of the lime cream mixture in the prepared pan.
  • Layer Maria cookies on top, breaking them as needed.
  • Add 1/2 cup of lime cream mixture, smooth it out, and repeat layering until all ingredients are used.
  • Finish with lime cream mixture on top, cover, and refrigerate for at least 4 hours or overnight.
  • Chill a mixing bowl and whisk, then combine heavy cream, sugar, and vanilla, whisking until stiff peaks form.
  • Remove the cake from the pan using the parchment paper, place on a platter, and decorate with whipped cream and garnishes.

Notes

Use the overhanging parchment paper to help remove the cake from the pan. Key limes can be used when in season. A baking dish or casserole can be used instead of a springform pan. Refrigerate for at least 4 hours before serving; overnight is preferable.
