Ingredients
  

  • 1.5 pounds boneless skinless chicken breasts or chicken breast tenderloins
  • for frying Vegetable oil
  • ½ cup cornstarch
  • 1 teaspoon salt
  • cup honey
  • cup lite soy sauce
  • cup ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 2 teaspoons minced garlic
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • pinch red pepper flakes
  • Sesame seeds for topping (optional)
  • Diced green onions for topping (optional)

Instructions
 

  • Cut the chicken into bite-sized pieces.
  • Whisk together the eggs, cornstarch, and salt to create the batter.
  • Coat the chicken pieces in the batter.
  • Heat oil in a large pan over medium-high heat.
  • Fry the chicken until golden brown and cooked through.
  • Transfer the fried chicken to a paper towel-lined plate.
  • Repeat frying with remaining chicken.
  • Mix the sauce ingredients in a small bowl.
  • Pour the sauce into a skillet and whisk until it simmers.
  • Toss the cooked chicken in the sauce.
  • Garnish with sesame seeds and green onions before serving.

Notes

For a crispier texture, consider deep frying the chicken or air frying with oil spray. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or air fryer for best results. For freezing, do not sauce the chicken; freeze the sauce and chicken separately.
