Ingredients
  

  • 1 ¼ cup oat flour scoop into measuring cup and level; do not pack
  • 1 cup pumpkin puree do not use pumpkin pie filling
  • ¾ cup Greek yogurt
  • 2 large eggs
  • ½ cup packed vanilla flavored protein powder
  • ½ tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line a standard loaf pan with parchment paper and grease with cooking spray.
  • In a large bowl, combine oat flour, pumpkin puree, Greek yogurt, eggs, protein powder, pumpkin pie spice, cinnamon, baking powder, and baking soda. Mix until fully combined.
  • Fold in the dark chocolate chips.
  • Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips on top.
  • Bake for 35-45 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
  • Remove from the oven and allow to cool to room temperature.

Notes

- Pumpkin pie spice can be substituted with individual spices (cinnamon, ginger, nutmeg, cloves, all spice).
- To make the recipe gluten-free, use gluten-free oat flour.
- For muffins, grease a muffin tin and divide the batter evenly.
- Store leftovers in an airtight container in the refrigerator for up to 1 week.
- Freeze the loaf by wrapping in plastic wrap; individual servings are recommended for easy storage.
