Ingredients
  

  • 4 fillets salmon skinless and boneless
  • ½ tsp salt cooking/kosher
  • ¼ tsp black pepper
  • 1 ½ tbsp olive oil
  • 1 tbsp garlic approximately 2 cloves, finely minced
  • 90 g salted butter or unsalted butter with an additional 1/4 tsp salt
  • 1 tsp lemon juice plus more to taste
  • 2 tsp parsley finely chopped

Instructions
 

  • Remove salmon from the refrigerator 30 minutes before cooking and season both sides with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat, then cook the salmon for 3 minutes until golden.
  • Flip the salmon and cook for an additional minute before adding the butter to the skillet.
  • Once the butter melts, add the minced garlic and baste the salmon with the butter for 1 1/2 minutes.
  • Ensure the salmon reaches an internal temperature of 50°C (122°F) for medium-rare, then let it rest for 3 minutes.
  • Return the skillet to the unlit stove, add lemon juice, and keep the butter warm.
  • Serve the salmon on plates, drizzle with butter, and garnish with parsley.

Notes

Use a total of 90g of butter for effective basting. Leftover butter can be stored for later use.
