Ingredients
  

Crust and Crumble Topping

  • ½ cup unsalted butter melted
  • ½ cup granulated sugar
  • ¼ cup light brown sugar packed
  • 1 ½ cups all-purpose flour
  • pinch salt

Filling

  • 1 large egg
  • ½ cup plain or vanilla Greek yogurt lite or sour cream
  • cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla extract
  • ¼ cup all-purpose flour

Strawberry Layer

  • 2 heaping cups diced strawberries fresh or frozen
  • cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 2 teaspoons cornstarch
  • 2 tablespoons all-purpose flour

Instructions
 

Preparation

  • Preheat oven to 350°F and line an 8-inch square pan with foil, then spray with cooking spray.
  • Melt butter for the crust and whisk in sugars, then add flour and salt. Reserve about ¾ cup of this mixture for the topping.
  • Press the remaining crust mixture firmly into the bottom of the prepared pan.

Assembly and Baking

  • Whisk together egg, yogurt, sugar, lemon juice, and vanilla until smooth. Stir in flour and pour evenly over the crust.
  • Toss strawberries with sugar, lemon juice, zest, and cornstarch. Add up to 2 tablespoons more flour if needed, then spread over the lemon filling.
  • Sprinkle the reserved crumble mixture evenly over the strawberry layer.
  • Bake for 60-75 minutes until the edges bubble and the crumble is golden.

Cooling and Serving

  • Let the bars cool on a wire rack for at least 2 hours. Refrigerate for another 2 hours before slicing for clean cuts.

Notes

Fresh or frozen berries can be used; if using frozen, add up to 2 tablespoons extra flour to the strawberry layer to prevent a watery consistency. Gluten-free 1:1 flour substitute is acceptable, but nut flour is not recommended. Bars are best served after resting overnight.
