  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 /2 teaspoon ground cinnamon
  • 1 /2 cup vegetable oil
  • 3 /4 cup light brown sugar, packed
  • 2 large eggs
  • 1 /2 cup sour cream
  • 1 tablespoon vanilla extract
  • 2 tablespoons whole milk
  • 1 ¼ cups small chopped peeled fresh peaches
  • Streusel Topping: 6 tablespoons granulated sugar, 4 tablespoons unsalted butter (melted), 2/3 cup all-purpose flour, 1/2 teaspoon fine sea salt

Instructions
 

  • Preheat oven to 425°F. Line a 12-count muffin tin with paper liners or spray with baking spray.
  • In a medium bowl, combine flour, baking powder, salt, and cinnamon; set aside.
  • In a large bowl, whisk vegetable oil and brown sugar until combined. Add eggs, sour cream, and vanilla extract; whisk until smooth.
  • Add the dry flour mixture to the wet ingredients and stir until just combined with no dry patches. Stir in milk.
  • Fold in chopped peaches. Divide batter evenly among prepared muffin cups.
  • For the streusel, mix granulated sugar, melted butter, flour, and salt in a medium bowl until crumbly.
  • Sprinkle the streusel topping evenly over the muffin batter.
  • Bake at 425°F for 5 minutes. Reduce heat to 350°F and bake for an additional 16-18 minutes until golden brown and a toothpick inserted into the center comes out mostly clean.
  • Cool in the tin for 5 minutes, then remove and cool completely on a wire rack.
