Fourth of July Cake Pops: A Festive Delight for Everyone

Ingredients
  

  • 1 package white cake mix plus ingredients listed on box
  • ½ cup vanilla frosting
  • 12 ounces white chocolate chips
  • 6 ounces red candy melts
  • 6 ounces blue candy melts
  • red and blue gel food coloring
  • ¼ cup shortening

Instructions
 

  • Bake white cake mix according to package directions in a 9x13 pan, cool completely, and crumble into a large bowl.
  • Divide crumbs into two bowls. Mix ¼ cup frosting and 3-4 drops of blue gel coloring into one, and ¼ cup frosting and 3-4 drops of red gel coloring into the other. Add more frosting if needed to bind.
  • Roll colored crumbs into walnut-sized balls and place on a wax paper-lined baking sheet. Freeze or refrigerate for 15-20 minutes.
  • Melt white chocolate chips in a double boiler, adding shortening ½ teaspoon at a time if too thick, until it coats a spoon slowly.
  • Dip lollipop stick tips into melted white coating and insert halfway into frozen cake balls. Let stand for 1-2 minutes.
  • Dip cake pops into white coating, tapping off excess. Stand upright in a styrofoam block or cardboard box to dry for about 5 minutes.
  • Melt red and blue candy melts in a double boiler, transfer to plastic bags, snip corners, and decorate dried cake pops.

Notes

If the chocolate coating cracks, the cake pops might have been too cold; warm them slightly before re-dipping. Ensure the crumb mixture holds together before rolling. Decorate by piping melted candy melts from plastic bags.
