Ingredients
  

  • 3 /4 cup (183.75 g) pumpkin puree
  • 1 cup (258 g) peanut butter all natural
  • 1 /3 cup (107.33 g) maple syrup or honey
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp pumpkin spice or cinnamon
  • 1 /4 tsp salt
  • 1 /2 cup (90 g) mini chocolate chips plus extra for topping

Instructions
 

  • Preheat oven to 325°F.
  • Spray a mini muffin tray with coconut oil.
  • Mix all ingredients in a large bowl until smooth.
  • Scoop batter into the tray, filling each slot almost to the top.
  • Bake for 17 minutes (or 20-22 minutes for regular-sized muffins) until a toothpick comes out clean.
  • Cool in the tray for 15 minutes.
  • Remove from tray and transfer to a wire rack to cool for an additional 15 minutes.

Notes

- Use pumpkin puree instead of pumpkin pie filling.
- Substitute pumpkin with sweet potato puree, butternut squash puree, or 2 ripe mashed bananas.
- Substitute peanut butter with almond butter, cashew butter, or sunflower seed butter.
- Omit chocolate chips and add nuts, seeds, or dried fruits (raisins, cranberries).
- Egg can be omitted or substituted with a flax egg or 1/4 cup applesauce (based on user reports).
- Dairy-free chocolate chips are recommended but other varieties are acceptable.
