Ingredients
  

  • 4 cups shredded cooked chicken approximately 2 large breasts
  • 2 cups instant rice
  • 1 can (10.5-ounce) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (10-ounce) diced tomatoes with chilies undrained
  • fajita seasoning to taste
  • 2 cups shredded cheese divided

Instructions
 

  • Preheat the oven to 350°F and grease a 9x13 inch baking dish.
  • Combine chicken, rice, soup, sour cream, vegetables, tomatoes, and seasoning in a bowl.
  • Pour the mixture into the baking dish, cover with foil, and bake for 35-45 minutes.
  • Remove foil, add remaining cheese, and bake until melted.

Notes

Spread the mixture evenly for even cooking and reserve some cheese for a gooey topping. Additional vegetables can be added for extra nutrition.
